5-Minute Cheesy Chicken Enchilada Grande
  Prep Time: 3 minutes    Total Time:5 minutes   Servings:1

All you need is 5 minutes for this simple dinner, some leftover chicken or pork, and three other ingredients, to get great Southwestern flavor, really fast!

Ingredients

    1/2 
cup shredded boneless,                skinless chicken breasts,              cooked or pork
  • 1
    (10-inch) flour tortilla, warmed
  • 1/2
    cup enchilada sauce
  • 1/2
    cup shredded Cheddar Jack cheese

How to Make It:

  • Step 1
Spoon the chicken down the center of the tortilla. Top with half the enchilada sauce and half the cheese. Roll up the tortilla and place seam-side down onto a microwavable plate. Top with the remaining sauce and cheese.
  • Step 2
Microwave on HIGH for 1 minute 30 seconds or until the cheese is melted.
Recipe Tips:
Flavor Variation: for a Cheesy Enchilada, omit the chicken and use 1 cup cheese. Place 3/4 cup cheese down the center of the tortilla. Top with half the enchilada sauce. Roll up the tortilla and place seam-side down onto a microwavable plate.  Top with the remaining sauce and cheese.  Microwave as directed above.
